Cozy Warm Soup

My co-worker LL made this soup and shared a taste of it with me. It's so good! I'm calling it Cozy Warm Soup, because it's perfect for a day like today that's full of drizzling rain and emphatic gusts. Though the original recipe is for beef and beef bouillon, an easy switch makes it vegetarian, and the ingredients are things that I usually have around in the freezer/cupboards. I've found vege bouillon at PCC; alternately, you can substitute the water for vegetable broth or stock as long as you adjust for the quantity of salt.


Beef Soup

One pound of leanest ground beef or vegetarian product
One large onion
One small bag of mixed veggies (carrots, peas, corn, green beans, cannelli or white kidney bean)
ΒΌ cup orzo
6 cups water
6 beef bouillon cubes
1 28oz can of whole peeled tomatoes (liquefy in blender)
pepper
two cloves of garlic


Cook beef onion and garlic together until beef is browned, pour off grease. If you are using TVP or other meatless, cook the onion and garlic in a few tablespoons of oil (olive oil adds a good flavor) until they are soft but not browned, then add the vegetarian product to warm it. Add tomatoes, water, pepper and bouillon cubes and bring to boil over high heat. Reduce heat to simmer for twenty minutes. Add orzo and vegetables and simmer for 15 minutes.

Homemade mac & cheese, w/ a lot of breadcrumbs on top. Yum.

Or plain white bread w/ an inch of peanut butter on top. Any other time I hate white bread, but nothing surpasses it for comfort!

A spoonful of dulce de leche! :)

It does wonders, but I've found out that foreigners tend to find it much too sweet, especially on its own. I guess we're just used to it here - we put it on almost everything.

That sounds like the way we treat whipped cream. Unless you're putting dulce de leche on... grilled cheese sandwiches or tomato soup. {wink}

My dad sometimes puts dulce de leche on a slice of cheese. ;) I still haven't dared to try, even with his "it's just milk on milk" explanation...

The notification email made it look like you were saying "unagi grilled cheese". I'm wary of trying Wild Fish's maki that involve melted cheese, so I was thrown for a minute.

I'd be willing to try eel on grilled cheese, but not if I was looking for comfort food.

I was an adult before I discovered one could put *stuff* (tomatoes, onion slices, etc) in a grilled cheese. You may now envision me giddy with joy at the idea of tomato slices in a grilled cheese sandwich.

I have a lemon scone this morning and it is very comforting...
