Chia Pudding
1 can (15oz) of coconut milk (I used Trader Joe's light coconut milk)
4 tsp of chia seed (more or less)
Allow the chia to soak in the coconut milk for 24 hours. It will thicken up to a wonderfully refreshing, naturally sweet soft pudding.
Serve with a little agave syrup, honey, or fresh fruit.

Chia seeds are an unprocessed, whole-grain food that can be absorbed by the body as seeds (unlike flaxseeds). One ounce (about 2 tablespoons) contains 139 calories, 4 grams of protein, 9 grams fat, 12 grams carbohydrates and 11 grams of fiber, plus vitamins and minerals.

This chia pudding is a good non-dairy alternative to yogurt or cream based fruit toppings, and it's easy to control the sugar/sweetener or leave it out.
